This recipe yields approx. 12 muffins.

 

 1 3/4 c flour 

1/2 c light brown sugar packed           

2 tsp baking powder 

1/2 tsp baking soda 

2 tsp cinnamon 

1 tsp salt 

1/8 tsp nutmeg        

1 c canned solid-pack pumpkin

1/2 c water

1/3 c vegetable oil

2 eggs, lightly beaten

1 c chpped pecans, divided

2 Tbl granulated sugar

                                   

 

 

1.  Preheat oven to 400 degrees.  Grease muffin pan cups lightly.  In medium bowl combine flour, and the next 6 ingredients.

2.  In a large bowl mix pumpkin, water, oil and eggs, stir in your dry ingredients just until moistened.  Stir in 3/4 cup pecans.

3.  Spoon into muffin cups.

4.  In small bowl combine 2 Tbl sugar and the remaining 1/4 c of pecans then sprinkle approx. 1 tsp of the mixture on each muffin.

5.  Bake approximately 20 minutes or until the tops spring back when touched and are golden brown.  Cool 5 minutes then remove from pan.
